In a medium
size bowl, combine flour, cornmeal, baking powder and salt. Stir
together well. In another bowl, combine milk, honey, egg whites,
applesauce, orange or lemon rind and almond extract. Mix well. Add
liquids to dry ingredients and stir only until just combined. Stir
in blueberries. Bake at 350oF for 25 minutes for regular size muffins
or for about 20 minutes for mini-muffins. This recipe will make
12 regular muffins or 24 mini-muffins. |
