BILLY BEE HONEY "LOW FAT" BLUEBERRY MUFFINS

Ingredients 1 1/2 cups all-purpose flour
3/4 cup cornmeal
1/3 cup Billy Bee Honey
4 tsp baking powder
1/4 tsp sea salt
1 cup 1% milk
2 egg whites
1/4 cup applesauce
1 tbsp grated orange or lemon rind
1/4 tsp almondextract
1 cup blueberries (fresh or frozen)
Direction In a medium size bowl, combine flour, cornmeal, baking powder and salt. Stir together well. In another bowl, combine milk, honey, egg whites, applesauce, orange or lemon rind and almond extract. Mix well. Add liquids to dry ingredients and stir only until just combined. Stir in blueberries. Bake at 350oF for 25 minutes for regular size muffins or for about 20 minutes for mini-muffins. This recipe will make 12 regular muffins or 24 mini-muffins.
